Physical and biological evaluation of glucose hydrazones as biodegradable emulsifiers

Herein, six novel amphiphilic glucose hydrazones were designed and synthesized as emulsifiers in three steps with non-column chromatography purification. A comprehensive study of them, including the surfactant/emulsifying properties, aggregation behaviors, hemolytic activity and biodegradability, revealed that their performances were determined largely by the corresponding alkyl side chain length. Excellent functional properties and biological safety were observed for the medium-sized hydrazones, among which compound 3d excelled with its outstanding emulsion stability. (c) 2021 Elsevier B.V.
